Soup, a traditional comfort food, is a significant part of the Canadian diet, according to research firm Technomic Inc. Nearly three-fifths of consumers prepare soup (55 per cent) at home at least once a week. By featuring a variety of soups on your menu, you can appeal to guests who may not normally have ordered soup. And since soup is a low-cost menu item with the potential for a high profit margin, adding variety means added revenue.

Rotate your soup menu.

Offer at least one cream-based soup and one broth-based soup every day.

Create holiday-themed menus.

Highlight soups like Asian New Year Meatball and Spinach Soup or Thanksgiving Pumpkin Bisque.

Go global.

Take your patrons around the world with your soups. Offer varieties from all over the globe, such as Italian Style Wedding, Lentil & Roasted Garlic, Red Thai Style Curry Chicken with Rice and Chicken Tortilla.

Garnish for added profitability.

+ Adding your own flavour and flair demonstrates your culinary expertise while also increasing upsell opportunities.

+ Try using a unique or traditional garnish with your soup for additional appeal. Garnishes offer perceived value, help highlight key soup ingredients, and also add an exciting new flavour or texture dimension to soups.

Romance your soups.

Menu descriptions, beautiful photography and staff recommendations can greatly enhance the appeal of any menu item. Romance your soup menu to encourage guests to order something they might not otherwise select. Words like “flavourful,” “seasonal,” “local” and “artisanal” all add diner appeal to soups.
