Berries & Blue Salad

YIELD: 16 servings, 2-1/2 cups (625 mL) each

INGREDIENTS:

  • mixed baby salad greens, tightly packed 1.5 lb. [675 g] 1-1/2 gal. [6 L]
  • fresh blueberries 2.5 lb. [1.1 kg] 2 qt. [2 L]
  • small broccoli florets, blanched 1.5 lb. [675 g] 2 qt. [2 L]
  • slivered red onions 8 oz. [225 g] 2 cups [500 mL]
  • Kraft Gourmet Blue Cheese Dressing 12 oz. [340 g] 2 cups [500 mL]
  • dried cranberries 8 oz. [225 g] 1-1/2 cups [375 mL]
  • walnuts, toasted, chopped 8 oz. [225 g] 1-1/2 cups [375 mL]

DIRECTIONS

FOR each serving: Combine 1-1/2 cups (375 mL) greens, 1/2 cup (125 mL) each blueberries and broccoli, and 2 Tbsp. (30 mL) each onions and dressing; mix lightly.

TOP with 1-1/2 Tbsp. (22 mL) each cranberries and nuts.

How to Quick-Blanch Broccoli
Add broccoli to saucepan of boiling water; let stand 30 seconds. Drain, then immediately add broccoli to bowl of ice water to stop the cooking process.

Variations
Substitute almonds or pecans for the walnuts; or raspberries or sliced strawberries for the blueberries.
